Harbin in winter is one of the world's most surreal travel experiences. The Ice and Snow Festival transforms an entire park into a frozen city of multi-story ice castles lit from within by blue, green, and pink LEDs. By day it's a sparkling white wonderland. By night it's something closer to a fantasy movie set. The temperature drops to -25°C or worse, but the city has dealt with this for a century — indoor spaces are heated to tropical levels, and the food (hearty Russian-influenced dumplings, sausages, and bread) is built for the climate.
